MIDTERM

 

Important points-

  1. Time- 1:30 hours
  2. Total Marks- 50
  3. Three parts A, B & C, in which Part A is compulsory of (15 marks) having Objective questions, MCQs, Fill in the blanks and matching type questions. Students have to answer the questions from Part-A on the paper itself. Time allotted for Part-A is 25 minutes
  4. Part B & part C consists of 25 marks and 10 marks respectively. Have to attempt -Part B- 5 questions of 5 marks each & Part C- 1 Questions of 10 marks. Time for Part-B and C is total of 01:05 hours.

 

 

PART B 

 

Answer any 8 questions from the following-

 

1. What is lathyrogen? Explain the problems and processing associated with lathyrogens?

 

2. What is rice conditioning and what is the effect of this on rice quality?

 

3. What is water mist polishing, explain its design and working?

 

4. What is the least processed form of rice? Briefly describe the production system with a suitable diagram.

 

5. Briefly explain the structure and chemical composition of cereals?

 

6. What is a color sorter?  Explain its principle, design and working.

 

7. Explain one of the methods by which we can know about the cooking quality of rice?
.

 

PART C

 

Answer any 1 question from the following-

 

1. Describe the most efficient rice polishing system with justification and suitable diagrams.

 

2. Briefly explain how India become self-sufficient in food grain production? Also, describe the status, production and major growing areas of wheat in India and the world?

 

3. Discuss antinutritional factors found in oilseeds and also explain how to destroy them.

 

 


 

END SEM

 

Important points-

  1. Time- 3:00 hours
  2. Total Marks- 100
  3. Three parts A, B & C, in which Part A is compulsory of (30 marks) having Objective questions, MCQs, Fill in the blanks and matching type questions. Students have to answer the questions from Part-A on the paper itself. Time allotted for Part-A is 40 minutes
  4. Part B & part C consists of 40 marks and 30 marks respectively. Part B- 8 questions of 5 marks each & Part C- 3 Questions of 10 marks each. Time for Part-B and C is total of 2:20 hours.

 

PART B 

 

Answer any 8 questions from the following-

 

1. With the neat sketch discuss the structure of wheat.

 

2. Explain in detail the chemical composition of pulses.

.

3. What is the effect of parboiling on milling, nutritional and cooking qualities?

 

4. Discuss the break system and reduction system of wheat milling.

 

5. Discuss how rice bran can be utilized in various ways.

 

6. Write in detail about novel rice products: Rice flour and flaked rice.

 

7. Explain the modern CFTRI method of pulse milling.

 

8. Distinguish between wet milling and dry milling methods of pulses

 

9. Write about processed soybean products: Soya oil, soybean meal, and soy flour.

 

10. Write a short note on soybean curd and soybean milk.

PART C

 

 

Answer any 3 questions from the following-

 

1. Discuss in detail the antinutritional factors of pulses.

 

2. Discuss the milling process of paddy to obtain quality rice.

 

3. What is the utility of germ in corn? Explain dry and wet milling of corn?

 

4. Explain in detail the steps involved in the refining of crude ails from oilseeds.

 

5. Write in detail about fermented soybean products: soy sauce, Miso, Tempeh and Natto.
