NIFTEM-BAKERY & CONFECTIONARY TECHNOLOGY-FST 311- Midterm +End Semester Question Paper Dec 2018- 5th Sem

MIDTERM

 

Important points-

  1. Time- 1:30 hours
  2. Total Marks- 50
  3. Three parts A, B & C, in which Part A is compulsory of (15 marks) having Objective questions, MCQs, Fill in the blanks and matching type questions. Students have to answer the questions from Part-A on the paper itself. Time allotted for Part-A is 25 minutes
  4. Part B & part C consists of 25 marks and 10 marks respectively. Have to attempt -Part B- 5 questions of 5 marks each & Part C- 1 Questions of 10 marks. Time for Part-B and C is total of 01:05 hours.

 

 

PART B 

 

Answer any 8 questions from the following-

 

1. Discuss various faults of bread and suggest the remedies.

 

2. Discuss the functions of various major and minor ingredients used in bakery.

 

3. Discuss various changes occurring during baking.

 

4. Comment on the SPREAD in short dough biscuit making. Discuss various factors affecting “spread”.

 

5. Comment on the problem of HOLLOW BOTTOM in short dough biscuits and suggest the remedies.

 

6. Discuss the Continuous Bread Making process in detail.

 

7. Write short notes on Multigrain Bread and Gluten-Free Bread.

 

PART C

 

Answer any 1 question from the following-

 

1. Discuss the bread-making process in detail.

 

2. What do you understand by the Rheology of dough? Discuss various equipments used in the bakery to determine the quality of wheat flour.

 

3. Discuss various methods for short dough biscuit preparation in detail.

 

 


 

END SEM

 

Important points-

  1. Time- 3:00 hours
  2. Total Marks- 100
  3. Three parts A, B & C, in which Part A is compulsory of (30 marks) having Objective questions, MCQs, Fill in the blanks and matching type questions. Students have to answer the questions from Part-A on the paper itself. Time allotted for Part-A is 40 minutes
  4. Part B & part C consists of 40 marks and 30 marks respectively. Part B- 8 questions of 5 marks each & Part C- 3 Questions of 10 marks each. Time for Part-B and C is total of 2:20 hours.

 

PART B 

 

Answer any 8 questions from the following-

 

1. Discuss the current status of the bakery industry in India.

 

2. Write an explanatory note on the “Importance of personnel hygiene in bakery plant”.

 

3. How is bread prepared using the “no time” dough method?

 

4. Differentiate between Reciprocating and Rotary cutting devices for biscuit production.

 

5. How will you classify cake making ingredients according to their functions?

 

6. Enlist the various crystalline sugar confectionery products and discuss the process of any one in detail.

 

7. Note down the importance and advantages of

(A) Cocoa rousing

(B) Alkalization of cocoa.

 

8. Discuss the chemical composition of cocoa beans.

 

9. Enlist the various ingredients of toffee with their respective functions.

 

10. Explain the preparation method of high boiled sweet candy.

PART C

 

 

Answer any 3 questions from the following-

 

1.Mention and comment on the laws governing the Bakery industry.

 

2. Enlist and explain the Key quality parameters of flour which you will assess to determine its suitability for making bread or biscuit.

How will you assess any two of these key quality parameters? What values or limits of these assessed parameters will determine the suitability of flour for a given purpose?

 

3. Enlist various missing methods in cake and describe any two methods in detail.

 

4. With the help of a neat flow sheet, discuss the steps in the manufacturing of orange chocolate slab.

 

5. Explain the batch making the process of toffee manufacturing.
